Whole Wheat Lemon Blueberry Bread {Food Matters Project}

With another busy busy week ahead (in which I will actually be out of town all week) I was really looking forward to my take on this week’s Food Matters Project recipe, chosen by Laura J!

I love a good fruit crisp and this weeks recipe for Lemon Blueberry Crisp with Pin Nut Topping looked especially good.  But, we already had a lot of desserts in the house so I decided on making a quick and easy breakfast bread instead!  It will be perfect for my early morning flight snack and I’ll bring an extra piece for my day tomorrow since I don’t have my meals planned out yet.

Sorry to keep this post short and sweet…but I’ve got to finish packing for my trip!


Whole Wheat Lemon Blueberry Bread
1 ripe banana, mashed
2 eggs
1 tsp vanilla
3/4 c milk
2 tbsp honey
1/4 c plain greek yogurt (or lemon flavored)
1/2 tsp salt
1 tsp baking powder
1 tsp lemon zest
1 c white whole wheat flour
3/4 c brown rice flour
1 c fresh blueberries
1/4 c chopped walnuts

In a large bowl  combine the banana and honey.  Then add the eggs, vanilla, milk and yogurt and mix well to combine.  Add the salt, baking powder and flours and mix to combine.  Fold in the blueberries and lemon zest.  Pour into a greased loaf pan, top with the chopped walnuts and bake at 35o for 50-55 minutes or until a cake tester comes out clean.

    Just made this but it didn’t work out . I don’t think you have enough dry ingredients in the recipe. Is it just one cup of flour? Or 2 cups: one cup of white and one cup of brown?

    • Hi Natasha! I’m so sorry, I think you are right! I went back to my notes about this recipe and see that I noted further down the recipe that I added 3/4 c brown rice flour to the recipe to thicken it. I’m SO glad you tried one of my recipes and am SO very sorry that it didn’t turn out…I’m sure that was frustrating! Hope you do try this one again, it was tasty!
