Gyro Meatball Sliders


OPA everyone! Remember yesterday when we talked about ‘elevating’ our Superbowl foods to the next level….well, let me introduce you to my new favorite game-day bite!

You might say, “there’s not much going on there Sara.” And you may be right.  But don’t let these babies pull a trick-play on your taste buds.  They are perfection!

Make sure to add these to your game-day menu and your fans will be begging for you to make more!

 Gyro Superbowl Sliders with Tzatziki Sauce
whole wheat dinner rolls
1 lb ground lamb
1 large egg
1 tbsp garlic powder
1/2 tbsp onion powder
1/2 tbsp dried dill
1/4 -1/2 c whole wheat or gluten free bread crumbs
1/2 c crumbled feta cheese
1/2 tsp salt
1 tsp black pepper
1/4 tsp cajun seasoning
1 tbsp olive oil

Preheat the oven to 350.  Line a baking sheet with foil and spray with non-stick spray.  In a large bowl, combine all meatball ingredients (only 1/4 c breadcrumbs).  Using your hand or a spoon, mix all of the ingredients together.  If the mixture is too wet, add more breadcrumbs.  Roll into golf-ball sized balls and bake at 350 for 15-20 minutes (until lightly browned and cooked through).

Tzatziki Sauce
1 1/2 c plain greek yogurt (I used Chobani)
1 tsp dried dill
1 tsp minced garlic
1 c peeled, seeded & diced cucumber
1/2 tsp salt
1/2 tsp black pepper

In a food processor, combine all ingredients until smooth.  Taste and adjust seasoning (add more salt or pepper) as needed.

To assemble, split rolls, add the meatball and top with sauce.

    WOW… Gyros are right up my alley…..another of my favorites…..thanks…..can’t wait to
    try this…..perfect size, perfect taste sensation, perfectly picturesque, well, I guess they
    are just PERFECT.
