Dark Chocolate & Almond Mousse

Light. Creamy. Chocolatey. Perfectly sweet. Surprisingly crunchy.  Simple. Perfection.

It is beconing you to try and believe me, it is worth it.

Some dishes are relaxing to make, almost like a hour-long yoga class or steamy cup of coffee in the early morning.  My favorite moment of making this recipe is adding the melted dark chocolate to the fluffy cream cheese and whipped cream mixture.  The chocolate slowly swirles into the white fluffy creating a dizzy swirl of chocolatey perfection.  And suddenly, as the chocolate slowly incorporates, everything is all right with the world and perfection can be found.  Yep, perfection.

This is also my recipe for this month’s Chocolate Party!  This month’s ingredient was double chocolate (Oh! Yes!) This mousse is not only filled with melted chocolate but also chocolate pieces are folded in WITH more chocolate on top!

Dark Chocolate and Almond Mousse
8oz reduced-fat cream cheese
1/2 c half-and-half
3.5 oz 85% dark chocolate, chopped
1 tbsp honey
1 tsp vanilla extract
1/2 tsp almond extract
1/2 c dark chocolate chips, chopped (at least 60% cocoa)
1/4 c roasted sliced almonds, chopped

In a small bowl, melt the dark chocolate, then set aside to cool. In a large bowl, whip the cream cheese until soft and fluffy.  While whisking, add the half-and-half and mix until well combined and fluffy (will resemble a loose whipped cream).  Add the honey, vanilla and almond extract (while whipping).  Then add the dark chocolate.  Then reduce the speed and add the dark chocolate chips and chopped almonds.  Once well combined (mixture will be light and fluffy like whipped cream).  Chill for 30 minutes to an hour.  Serve and top with additional chopped chocolate and almonds.

    • Funny, I thought about you when I made this one! It was really simple so you should! And it keeps really well in the fridge, so it will last awhile and you can take little bites :)

  6. Two of my favorite things are chocolate and almonds. Well almonds only when they accompany chocolate! This mousse looks gorgeous! My favorite part of mousse is adding the chocolate to the cream. So beautiful :)
